White Black café開業已七年，店位於彎仔區的香港會議展覽中心，常有許多的大型展覽會及國際會議在此舉辦，特別是3~4月及9~10月，例如珠寶展..等，加上有幾層被利用為辦公室。因為這些原因，客層大多數為在那裡上班的上班族、與展覽工作相關的外國人員，因White Black café提供較西式的餐飲，(所以能吸引到較多外國人)，慢慢地，形成了客源穩定之現象，同時也造成容易預測顧客的需求，使得店家能夠很了解該如何去決定存貨水準。
White Black café has been operating for 7 years which is located in Hong Kong Convention and Exhibition Centre at Wan Tsai. There are large numbers of exhibitions and international conventions taken place in here every year, especially in March to April and September to October. Such as the exhibitions of jewelry, music fair…etc. In addition, some floors are utilized as business offices. In terms of these reasons, most of the consumer groups are the senior managers, white-collar workers, and some staff who are attending the international conference. Besides, White Black café will attract lots of foreigners because of they provide western food as the foreigners used familiar with. Gradually, it has been forming the state of stable customer’s pool. In consequence, it’s easy to forecast customer’s demand; indeed, it’s has been utilizing as a significant information for the operator of White Black café to figure out how to decide the inventory level.
由於店家所持有的存貨皆有保鮮期限之限制，如果食材過了保鮮賞味期，這些存貨就會累積成過時成本，而這些存貨無法再加以利用、販賣、甚至是退貨，最好的解決辦法就是將所有的過時存貨都棄置。
Due to the inventory of the White Black café are almost restricted by its expiration date, it would result in the cost of obsolescence if the raw materials not be used before they are fresh. Because of those obsolete items does not have the ability remain to sell out to customers, have other utilization functions, and return them to supplier. Therefore, the optimal way to fix this problem is to dispose all the obsolete goods.
